It is FINALLY spring, which means it’s time for fresh and tasty desserts! Try out this delicious strawberry lemon blondie recipe, which has little pockets of fresh diced strawberries and zesty lemon to give the bars a bright, tangy vibe!
Ingredients:
Blondies:
- 1 cup (2 sticks) of butter, room temperature
- ¾ cup sugar
- 1 large egg
- ¼ cup lemon juice
- 2 ¼ cups of flour
- ½ tsp baking powder
- ½ tsp salt
- 1 cup of fresh strawberries, diced
Glaze:
- 1 cup of powdered sugar, sifted
- 1 tbsp strawberry puree (about 2 large strawberries – instructions below)
- 1 tbsp lemon juice (just enough to thin the glaze to a spreadable consistency)

Instructions:
- Preheat the oven to 350F
- Line a 9 inch square baking sheet with parchment paper, leaving long edges on the side. This will help with lifting out the blondies for easy glazing and icing later.
- Cream together butter and sugar until fluffy. Beat in the egg.
- When the egg has been thoroughly mixed in, beat in the lemon juice.
- Whisk together flour, baking powder, salt. Add to wet ingredients, mixing until combined.
- Gently fold in diced strawberries. Pour mixture into your pan and spread out evenly.
- Bake for 30-35 minutes, until blondies start to turn golden around the edges and the center is set. Don’t overbake, or they will dry out.
- Trim the strawberries for the glaze and puree in a food processor. Strain the puree through the small strainer to get 1 tbsp of puree. Whisk together the sugar, puree, and lemon juice until no lumps remain. If glaze is too thin, add sugar. If too thick, add more lemon juice.
- Spread the glaze over the cooled blondies – let the glaze set before slicing and enjoying.
